Cozy Up with a Bowl of Hearty Beef Stew

Keep warm this winter with a classic dish that we all know and love: beef stew. Enjoy this hearty beef and vegetable stew featuring some special ingredients sure to have your mouth watering the moment the first bite hits your taste buds.

Beef Stew Roasted Meat
What you'll need:
  • 2 pounds beef chuck roast (cooked in a slow cooker until tender and broken apart)
  • 2 large Irish potatoes (washed and cut into chunks)
  • 1 medium onion (coarsely chopped)
  • 1 bell pepper (diced)
  • 2 stalks of celery (trimmed, washed and coarsely chopped)
  • 3 carrots coarsely chopped (washed and scraped)
  • 1 cup of frozen English peas (or corn or blend the two)
  • 3 cloves of garlic (diced)Beef Stew Vegetables Cooking
  • 1 can of diced tomatoes and juice (your choice of finish – roasted, garlic, Italian etc.)
  • 1 can of tomato sauce
  • 2 cups of beef broth (taken from juice from cooked roast)
  • 2 cups of water (adjust to your taste, more for thinner less for thicker – 1 cup of the liquid can be any non-sugary liquid you like: coffee, beer, wine, chicken broth, unsweetened tea, etc.)
  • 3 tablespoons of lemon juice
  • 3 tablespoons of Italian seasoning
  • 1 teaspoon of garlic chili paste
  • 1 teaspoon of salt & pepper (adjust to your taste)
Cook your beef chuck roast in a slow cooker ahead of time during the day, just until it becomes tender and breaks apart easily.Beef Stew Simmering

In a large Dutch oven or pot, cook the onion, celery, bell pepper, garlic in a ¼ cup of olive oil, 
stirring 1-2 minutes to soften the veggies. 
Combine in the tomatoes, tomato sauce, beef broth, chili paste, Italian seasoning, salt, pepper and lemon juice. Add all the rest of the ingredients – meat, potatoes, peas and rest of liquid – mixing well. 

Let it come to a boil. Cover the Dutch oven or pot and bring to a simmer, stirring occasionally for 30-40 minutes, or until all the flavors blend and the potatoes are fork tender.  

Ladle the stew into soup bowls and enjoy! Beef Stew ready to serveIt can only be improved by adding nice, hot buttered bread to the menu. And don’t stress about finishing it all up in one evening, this stew tastes even better the next day.
