Warm Up with Yummy Kale & White Bean Soup

Kale and White Bean Soup chopped veggiesNothing beats cozying up with a hearty, warm cup of soup during the cold months. Today we bring you a recipe that’s both healthy and satisfy – a Kale and White Bean soup packed with fresh veggies and a little bacon added in for flavor.

You’ll need:
  • 4 strips of bacon, chopped (or sausage)
  • 1 onion, diced
  • 2 cloves of garlic, mincedKale and White Bean Soup add the liquid
  • 2 sticks of celery, chopped
  • 2-3 carrots, thinly sliced
  • ¼ teaspoon of red pepper flakes
  • 1 can of white beans
  • 2 cans of diced tomatoes
  • 1 quart of chicken stock
  • 1 sprig of thyme
  • 3 large kale leaves, choppedKale and White Bean Soup with Kale simmering

Cook the chopped bacon in the bottom of a large pot on medium-to-high heat until brown. Then sauté the diced onion, minced garlic, chopped celery, sliced carrots and red pepper flakes for 2-3 minutes or until the onion is slightly translucent. 

Combine the can of beans, cans of diced tomato and chicken stock with the sautéed veggies. Now throw in a sprig or two of thyme. Let this simmer on low until it becomes bubbly.

During the last 10 minutes of cooking, add in the chopped kale leaves.
Kale and White Bean Soup with toast
Ladle the soup into some soup bowls, sprinkle with shredded parmesan and cracked black pepper, serve with a slice of a crusty baguette and there you have it – dinner is served!
