Southern New Potatoes and Green Beans Are What’s Cooking in the Texas Pure Kitchen!

Promises of spring are starting to show as Southern New Potatoes and Green Beans Step 3the 
air warms and gardens begin to bloom, and to celebrate we have a side dish of Southern New Potatoes and Green Beans. It’s perfect for any spring evening or Sunday Easter meal. This dish features fresh new potatoes and green beans cooked with bacon for a southern flare that is sure to be a crowd pleaser.

What you need:
  • 5 slices of bacon, chopped
  • Half of a medium-sized onion, chopped
  • 2 cloves of garlic, minced
  • 1 ½ pounds of fresh green beans, ends removed
  • 12 small new potatoes (halved if large)
  • 2 cups of chicken stock
  • Salt
  • Pepper
At the bottom of a large cast-iron skillet or saucepan, cook bacon on medium-high heat for about 5 minutes until it browns. Then, add the chopped onion and minced garlic and sauté until translucent.

After your bacon, onions and garlic are cooked, put in your green beans and new potatoes along with two cups of chicken stock.

Bring it to a boil and then reduce to low heat. Season with salt and pepper to your liking, then cover the skillet or pan. Let it simmer for 40 minutes or until the potatoes and green beans are tender.
