Warm Up with Sherrian's Chicken Tortellini Soup

Looking for a warm and hearty meal to help you and your family get through the cold winter days? Look no further! Sherrian's Chicken Tortellini Soup recipe is packed with plenty of protein and fresh vegetables, bursting with flavor, and makes enough for you and your family to eat on for the entire week.

Chicken Tortellini Soup Step 1

 What you will need:
  • 3 cups of cooked and cut up chicken breasts 
  • 3 tablespoons of olive oil
  • 1 onion (diced)
  • 1 red bell pepper (diced)
  • 4 cloves of garlic
  • 1 can of chick peas (drained and rinsed)
  • 1 can of quartered artichoke hearts (drained and rinsed)
  • 1 can of diced tomatoes
  • 2 tablespoons of fresh squeezed lemon juice
  • 1 package of fresh tortellini (in grocery’s deli area - buy any kind you like!) 
  • 2 quarts of chicken stock (add more if needed)
  • 1 tablespoon of Italian seasoning
  • 1 teaspoon of chili garlic paste/sauce (in the Asian section of the ethnic food aisle)
  • Fresh spinach

At the bottom of a large pot, sautéChicken Tortellini Soup Step 2 the diced onion, red bell pepper and garlic with the cooked chicken in olive oil for a few minutes or until the veggies have softened. 

After that, add all the other ingredients to the pot, except the tortellini and spinach. 
Then keep it on medium to high heat and let the mixture gradually come to a soft boil. Once it is boiling, add your Chicken Tortellini Soup Step 3tortellini to the soup and cook as instructed. Typically, it will take 6-8 minutes to cook. 

As soon as the tortellini is done cooking, it is ready to be served! Grab a handful of pre-washed spinach, put it at the bottom of your soup bowl and pour some of the hot soup on top. This wilts the spinach but keeps it fresh and delicious.

Sprinkle it with a bit of Parmesan cheese and pair it with a slice of fresh cottage bread; and you’ve got yourself the perfect meal to cozy up with by the fire!
