Dig into the Perfect Super Bowl Snack: Buffalo Cauliflower Bites

Looking for the perfect snack for the big game? Buffalo Cauliflower ready to serve with celery and ranch dressingTry out these crispy, spicy Buffalo Cauliflower Bites! This veggie spin on buffalo chicken wings is sure to please both vegetarians and meat-eaters, and they might just be delicious enough to bring Rams fans and Patriots fans together.

What you’ll need:
  • 1 head of cauliflower (chopped)
  • 1 cup of milk (can substitute for water, almond milk, soy milk, etc.)
  • 1 cup of flour
  • 3 tablespoons of butter (or olive oil)
  • 1 teaspoon of garlic powderBuffalo Cauliflower Bite ingredients
  • Salt and pepper to taste
  • 2/3 cup of Panko crumbs
  • 2/3 cup of hot sauce
Mix together the flour, garlic powder, salt, pepper, milk and 1 tablespoon of butter in a large bowl. Add a little more liquid if you think it’s too thick. Take your cauliflower, chopped into bite-sized pieces, and toss it in the batter until well coated.

Buffalo Cauliflower goes a coatingTo coat the cauliflower in Panko crumbs, you have a couple of options. You can sprinkle the Panko crumbs over the cauliflower after placing them on a baking sheet. Or, you can pour the Panko crumbs in a shallow bowl and toss each piece of cauliflower in the crumbs individually. We went with the latter. 

After coating your cauliflower in both batter and Panko crumbs, place them on a foil-lined baking sheet. Bake at 450 degrees F for 15 minutes.

 Buffalo Cauliflower getting saucedWhile waiting, combine 2/3 cups of hot sauce and 2 tablespoons of melted butter in a small bowl. After 15 minutes is up, remove the cauliflower from the oven. Place the cauliflower in another bowl and pour the hot sauce mixture over top, then gently toss until each piece is coated but not oversaturated.

Place the cauliflower back on the baking sheet and bake for another 10-15 minutes or until it starts to brown a little.

Once your buffalo cauliflower bites are cooked,  Buffalo Cauliflower bakingserve-up immediately while still hot and crispy with an extra dash of hot sauce and a side of ranch or blue cheese dressing. Just don’t forget to grab some for yourself while your hungry guests help themselves – trust us, these morsels of goodness will go fast.
